I think it all depends on your expectations, what and how much you are looking to do each day, and your tolerance levels for heat and crowds/lines. Some people and handle and work around crowds, accepting that you will not see or do everything, ride your most popular attraction 5x in day, and can manage the cold, rain or heat/humidity. So depending on those, it is possible for someone to plans for and experience their own great WDW vacation for any day of the year. Really comes do to your expectations and what you are willing to accept given conditions on any given day. Personally lower crowds and lower costs (including airflights) have been the deciding factors, but even then you still have to have fair and reasonable expectations when you arrive and adapt throughout your visit and daily as to the conditions that may not meet your plans or expectations.
