Anyone know what changes will be made, if any, to WOC for the holiday season? Will it be themed to match the wintery decorations? Since the parks will be closing earlier, the sun going down sooner, will the show times be ealier?

It's way too early to tell. We don't even know if WoC will be showing at all during the holiday season, and, if so, what the schedule will be. It could be once per night, it could be weekends only - we have no way of knowing. We haven't even gotten the full HalloweenTime schedule/list of highlights yet, and that starts next month!
I think WoC is set up so that it can eventually have a holiday overlay, but I would be shocked if DLR did that the very first year. That's probably something that will happen down the road.
Timewise: they seemed to have extended DCA's hours to 8 pm with a 8:15 WOC show nightly this fall. I expect the same over the holiday season (with longer hours and extra shows on the weekends). As far if there will be a holiday theme, we don't know.....but I don't really expect them to change the show for the holiday seasons until the original show has ran for awhile.
The bottom line is, we don't know anything. We can say we think this or that will happen with WoC, or we expect this or that will happen with WoC, but this is its very first year so we have no experience upon which to draw yet. A year from now, we will know more and be able to give more educated answers about what happens with WoC during Christmastime and how it is handled. But right now we are just making guesses. The holiday season schedule may be somewhat different than what is happening for Fall. I merely assume that it is way too soon for DLR to start rolling out a holiday theme of any kind for WoC - but you never know. Maybe they will surprise us!
Steven Davison and Sayre Wiseman (the main people responsible for WoC) have been asked this question on multiple occasions, and their response has essentially been yes, someday, but for now we're just trying to get the show going in its original form. So I would not expect anything different this year, since there are too many people who haven't seen the new show yet. But in the next year or two, who knows? They have also mentioned "tags" or encores, so it might be that what we would get is the regular show with an extra "tag" at the end, like what they do with the Holiday Finale for Epcot's Illuminations.
