WOC Dining Package vegetarian lunch options

Looking at the World of Color dining package lunch menus at allears.net, I was surprised that no vegetarian entrees were listed for either arthay or the Trattoria. I'm more accurately pescatarian, so I could survive with the salmon at Carthat, but I'd prefer more options, but would prefer lunch and not dinner.

Is it likely the allears menu listings are incomplete? Can I specify vegetarian while booking the reservation, and hope it will be something I'd like? I know Disney is good at accommodating allergies and other special requests, but it seems odd that they'd not have a vegetarian option on these menus.

It's possible that the menus are incomplete, but even if there not, I've had lunch at both Carthay and Wine Country, and BOTH have been willing to make me something off-menu, even as part of a dining package. Heck, Carthay has made me something special when I was just tired of the vegetarian menu options. Just let the server know and they'll make it happen.

I did the WOC dining package at Carthay Circle in May and there was a vegetarian risotto on the menu. I had it and it was fantastic (I'm not a vegetarian). The risotto was formed into cakes and pan fried or something. Delicious!

Carthay tends to not list Vegetarian/Vegan options and then talk to the chef.
