Everyone has a favorite recipe, so why not share it with the people you share your Disney Wishes and Dreams.

Let's make this the best thread. Please share with us a recipe or two or three. Any recipe will do, cookies, candy, cakes, main dishes, side dishes, appetizers, etc. And let's keep this going even after the holidays.

Roast Turkey
I put ¼ stick of butter in the cavity before stuffing. I then rub soften butter over the outside, the Salt, Pepper and Paprika. I start it out at 350 for an hour, then down to 200. When close to done, I remove the lid and put the oven back to 350 to brown. Never take the lid off or baste until the end..

Grilled Turkey Breast for Buffet..

You will need a cake pan that has a lid with holes in it. I don’t know what they call it, but similar to a broiler pan..

Lay out several sheets of foil, place a thawed Turkey breast on it and drench with your favorite B-B-Q sauce.
Wrap the Turkey tightly, fill the cake pan with water and place on the grill, and place the Turkey on the pan.
I cook it a couple of hours, depending on size. You can’s burn it. Keep water in the pan.
The B-B-Q sauce will absorbed into the meat and you can serve it hot or for cold cuts.
It is very moist and the flavor is to die for.
My late Wife, it was her favorite, always had me outside in a snowstorm fixing it for our neighborhood Christmas party. She would serve it sliced on a party tray with a Mayo and Horseradish mix. LOL
I also do the same thing with a Pork Tenderloin
 
For those of you that love the Berry Cobbler ofArtisr's Point, here you go Enjoy

Berry Cobbler
Artist Point - Wilderness Lodge Resort

3 cups all-purpose flour
1/4 tbsp. salt
2 1/2 tbsp. baking powder
1 1/8 cups granulated sugar
1/2 cup unsalted butter
2 eggs
1 cup heavy cream
2 cups blueberries or other seasonal berries
8 tbsp. brown sugar
8 tbsp. unsalted butter
Whipped cream or ice cream

Combine the flour, salt, baking powder and sugar. Break the butter apart into small pieces and mix it in. Add the eggs and stir until just absorbed. Add the heavy cream and mix just enough to incorporate (batter should be lumpy). Divide the dough into four pieces.

In four 6 inch cake pans lined with parchment paper, place the pieces of dough, spread evenly along bottom of the pans. Spread the blueberries on top of each piece. Sprinkle each with 2 tablespoons brown sugar. Dot each with 1 tablespoon butter.

Bake in a preheated 350 degree oven for 15 minutes, or until an inserted toothpick comes out clean and dry. Cobblers should be lightly browned. Cool to room temperature, add fresh berries (if desired) and serve with a dollop of chilled whipped cream or vanilla ice cream.
 
A REAL PARTY PLEASER.

Chicken Wing Scampi.

Put 5 to 10 pounds of Chicken wings, cut up, in a large aluminum roaster sprayed with non-stick. Put on the to top rack of the grill on medium heat.
Stir occasionally and when close to done drizzle with Garlic butter. Keep stirring and drizzling until done.
Guaranteed to disappear in short order.
Can also use your favoite BBQ sauce.

Yield: 1 Pan

Ingredients

1¾ cups all-purpose flour

¾ cup cornmeal

1¼ cups granulated sugar

1½ teaspoons salt

1 tablespoon baking powder

½ cup vegetable oil

2 each large eggs, beaten

1 cup milk

Method of Preparation

Add flour, cornmeal, salt, baking powder, and sugar together in a mixing bowl and blend.
Combine milk, eggs, and oil in another bowl and blend together; slowly add liquid to the bowl of dry ingredients; mixing as you add liquid. Mix only enough to incorporate together.
Spray a 9 x 13 cake pan with a non-stick food spray and pour the cornmeal batter into the pan. Make sure to spread evenly in the pan.
Bake in a preheated oven at 375°F for 20-25 minutes or until golden brown.
 
The really cold weather has hit NH (30 degrees as a high) and snow is in the air. Time for me to plan my holiday baking- I'm an avid cooking baker at holiday time- love to make many different kinds to share with family and friends.

Here is one that is always part of the mix- if it wasn't I think there would be massive protest! ;)

Peanut Butter Balls or 'Buckeyes'

1/2 pound margarine (I use butter)
1 teaspoon vanilla
1-1 1/2 pounds confectioners' sugar
1 cup peanut butter
12 ounces chocolate chips
1-2 ounces paraffin

Melt margarine until very soft, but not a liquid. Mix vanilla, sugar, and peanut butter until firm enought to form balls. Refrigerate 20-30 minutes.

Melt chocolate chips and paraffin in top of double boiler. Dip balls in chocolate with toothpicks. Drain on waxed paper. You may put in refrigerator for a few minutes. THis makes the chocolate harden quickly.

Christmas Candy


11 x 15 Cookie Sheet
Aluminum Foil
1 Sleeve Unsalted Saltine Crackers
12 oz bag of Chocolate Chips
½ lb. Butter (NOT Margarine)
1 Cup Brown Sugar
2/3 Cup Chopped Almonds, Pecans, or whatever nut you prefer

·Line cookie sheet with aluminum foil (bottom AND sides) and grease foil (VERY well).
·Line the bottom with crackers.
·Turn on the oven to 400 degrees.
· Melt the butter and brown sugar on the stove for about 3 minutes.
·Pour the butter/sugar mixture over the crackers and smooth.
·Put the pan in the oven for 5 minutes.
·Turn off the oven and pour the chocolate chips over the crackers.
·Put it back in the oven (still turned off) for 2 - 3 minutes or until chips are melted.
·Take the pan out of the oven and smooth the chocolate over the crackers.
·Sprinkle the nuts on the top and press slightly into chocolate.
·Let candy cool slightly.
·Put the pan in the freezer for about an hour.
·Remove from the freezer, peel off the foil, and break into pieces.
 
Easy & very yummy!

Make ahead mashed potatoes


This recipe is great because you can get the same delicious result when you make the potatoes a day early. It will save you time on the day of your dinner party.

Serving: 20
Prep Time: 20 minutes minutes
Cook Time: 50 minutes
Total Time: 70 minutes

5 pounds Yukon Gold potatoes, cooked and mashed
2 (3-ounce) packages cream cheese
8 ounces sour cream
1/2 cup milk
2 teaspoons onion salt
ground black pepper

1. Combine mashed potatoes, cream cheese, sour cream, milk, onion salt, and pepper to taste. Mix well and place in a large casserole.

2. Cover and bake at 325 degrees F for 50 minutes.

NOTE: if you make these the day before, take them out of the fridge an hour before baking them to take the chill off, and then you may still have to add 10 minutes to the time to get them good and hot.

Based on individual serving.

This is the best Gingerbread cookie recipe I have ever found-

1 Package Dincan Hines Moist Spice Cake Mix
2 teaspoons ground ginger
2 large eggs
1/3 cup vegetable oil
1/3 cup dark molasses
1/2 cup all-purpose flour

Combine all ingredients in large bowl and mix well; chill for 2 hours

Preheat oven to 375 F & roll dough on lightly floured surface to 1/4" thickness. Cut in desired shapes; place on ungreased cookie sheets.

Bake for 8-10 minutes or until edges just start to brown. Cool several minutes on cooling rack, then remove from rack to finish cooling.

I usually decorate with the white icing- they are so good and moist!
 
I found this recipe in our paper last year & I got a ton of compliments on them:

Lemon Meltaway Cookies

3/4 c butter or stick margarine , softened (do NOT use light or tub margarine!)
1/3 c powdered sugar
1/2 c cornstarch
1 1/4 all purpose flour
1 teaspoon grated lemon zest
1 tablespoon lemon juice

Icing-
1/4 c butter
3/4 c powdered sugar
1 teaspoon grated lemon zest
1 teaspoon lemon juice

Cream butter until light and fluffy. Add powdered sugar, cornstarch, flour, lemon zest, and lemon juice. Mix til creamy. Divide dough into 2 logs and chill

When dough is firm, preheat oven to 350 degrees. SLice dough and place on a baking sheet. Bake for 10 minutes. Cool before Icing

To make icing: cream butter. Add powdered sugar, lemon zest and juice and mix til mixture is spreadable.
 
This is my sister's (tchrmom) recipe...they are OUT OF THIS WORLD!

1 stick of butter
1 stick of marg.
1/2 cup of sugar.
Graham Crackers split into quarters
Sliced almonds
Baking pan with "lip"

Boil for 2 minutes. Line up crackers so they cover the bottom of the pan. Pour butter mixture over crackers. Sprinkle with almonds, if you like. Bake in a pre-heated (350) for 10 minutes. Chill in the freezer for a few minutes, to firm them up.

I store them in the freezer to keep them cold...I have taken this to MANY cookie exchanges and I always get asked for the recipe!
 
Easy recipe, with all the football games coming up. Great appetizer. I usually double or triple the recipe.

Sweet Hot Wings

1 cup Pace Picante Sauce
¼ cup honey
½ tsp. cumin
12 wings

Mix together all ingredients except wings. Cut wings into sections, discarding the tips. Toss in sauce and marinate for 4 hours or overnight.

Heat oven to 400 degrees. Put wings in shallow baking pan and bake for 55 minutes. The last 30 minutes of cooking brush with sauce every 10 minutes. Turn oven to broil and broil the last 5 minutes.

Makes 24

This stuffing is sooo delicious. Lots of ingrediants that may sound strange to mix, but the end result is amazing.

Sausage/Cranberry Stuffing

1 bag of seasoned stuffing mix. (Arnolds, pepperidge farm, etc)
1 lb of loose italian sausage meat no fennel (if you cant get loose,,the links will do, but make sure you remove the meat from the casing, then fry it up).
1 can cranberry sauce with berries (maybe 2 cans, depends on your taste)
1 can pineapple chunks.
Raisins.
2 red delicious apples, cut into chunks
2 large onions
several stalks of celery sliced.
Chicken broth ( I make it from the herb ox boulion cubes). At least 1 cup or more.

Fry up the sausage and drain fat.
Sautee the onions & celery in half stick of butter.
Add to seasoned stuffing mix along with diced celery, apples, can of pineapple chunks, can of cranberries, raisins (add according to your taste). Toss all this together. Then add the chicken broth a little at a time and moisten it to your liking. ( I like mine moist)

Stuff the bird and put the extra in a seperate baking dish.
