if you have stayed in a standard view room/courtyard view room AND a copper creek studio, which do you prefer? I am driving myself crazy going back and forth (it's just a room after all, right?) I am thinking the theming of the CC rooms won't be as good?

It is very subjective. The rooms are the same size, but decorated and furnished differently. The biggest issue with the studio is that the second bed is a pull out, where you have two real beds in the regular room. The Copper Creek rooms are much newer and more modern, with hard floors and less rustic furnishings. In general the regular rooms have better view options, since they have a chance at unobstructed views of MK fireworks, while Copper Creek rooms face either pool courtyard.
If you go with a regular WL room we’d recommend not spending the extra for Courtyard View, but some feel it is worth it. We have done well with Standard View and balconies that face towards MK.

It is a minor difference overall, since the rooms are in the same building and can just be a few feet from each other. You can’t go wrong.

Have you looked at Boulder Ridge? The DVC rooms? I prefer these to all of the above for many different reasons.

Ive stayed in both and think that CC is probably a bit nicer since the rooms are new and brighter, but we tend to prefer the standard lodge rooms )even though they are getting tired) because we love the theming, and we love having two real beds rather than the pull out. Really you can't go wrong here.
