Without a park hopper ticket...

Without a park hopper ticket, can we still leave the park and return to the same one later in the day? For example, if we leave MK to swim, can we return to MK later for fireworks. I understand we can only visit one park a day, but I wanted to be sure we could reenter if necessary, since we're traveling with 3 & 5 year old that will need a break.

Yes, the finger-scan has replaced the need for the stamp.

You may exit and enter the SAME park on the same day as many times as you like without a hopper.

You just need your ticket and your finger(s).

Just the ticket and you can enter the same park. If you should decide during your stay that you want a parkhopper you can go to Guest Services and upgrade your ticket.
