Disney has no such limits. As to the government, it depends on which country the cruise terminates on. For cruises that terminate in the US, there is no limit on the amount of alcohol (liquor, beer, or wine) that you can bring with you, unless it's obviously so much that you're importing it for resale and not for personal use (which would have to be A LOT). Having said that, there are limits as to what you can bring back duty free, above which you'll have to pay duty. But duty is surprisingly cheap unless you have cases of it. And, if you're only marginally over the limit, often times they don't even bother collecting the duty, as long as you declare it. I wouldn't let the fear or cost of duty prevent you from taking a few bottles off the ship with you if you otherwise would.
