How realistic is it to come back to WH midday for a rest? We will be renting a car...is it close enough to skip out for a few hours around 2p and come back at 5p??

It is as realistic as riding the Disney Buses back to your resort.

There is a back entrance to DW called Sherbeth Rd, it comes out beside the AK. It literally takes 10 minutes from Windsor Hills to the parking lot of AK. Maybe 20 minutes to MK.

You have to consider the walking time to get to your car from the parks, but you would have walking and waiting time for the buses also.
 
We did it easily on our Epcot day. We considered doing it for one of our MK days, but it takes quite a long time to get out of that park. Also, the monorail was closed in the afternoon we were trying to do that, so we did the boat to the TTC. It took an hour from the time we left the gate of MK until we got back to WH. I'd say it is possible to do breaks at MK to Windsor Hills, but it wasn't worth it for us since we weren't doing late nights at all with our little ones.
 
It is very doable. We typically go back to a different park in the evening, so you don't really lose all that much more time than you would have in just switching parks. From Animal Kingdom or Hollywood Studios, it's a short, easy trip. A few minutes longer from Epcot, and sort of a pain from the MK.

Coming back for a rest mid-day makes the entire day much more enjoyable, if you have little ones. We have made it from the Animal Kingdom parking lot, to our driveway in Windsor Hills in 6 minutes. The kids don't even have enough time to fall asleep in the car :thumbsup2
 
We would always come back about 3, have a rest and an early supper and head back to the parks for the evening.
 
When we stayed at WH we returned every day for a break/nap/swim and would return to the parks after supper. Having stayed in Disney hotels as well, it is probably faster than using Disney transportation!:)
 
Like everyone else has said, it takes just as much time as catching a bus back to your resort (except for the MK since you have to go to the TTC). We almost always came back for a snack and some pool time (nap time for me) and just to get out of the crowds for a little while.
