For what it's worth, I just don't get the "south-facing pool" appeal. I'm in Houston, so I know heat like at WDW, and if I'm in the pool when it's warm or hot out, I want shade, not sun! I suppose if I were going in the winter, then I might want sun, but I much prefer to be in the shade when I'm swimming or sitting out by the pool.
But then I'm one who hates the sun.

I get more than enough of it in the parks, and you'll find me walking on the shady side of main street, or under trees, or even going through shops to find shade when I'm in the parks!
I think you can't really go wrong with any of the neighborhoods/resorts you listed, but be sure you understand the difference between them. Indian Creek is an actual neighborhood - not gated and no clubhouse amenities,, and I believe would be the oldest of the 3. Emerald Island I believe is next oldest and is a resort with a gate and a clubhouse, but not as new and not as many clubhouse amenities (i.e. pool slide) as at Windsor Hills. Windsor Hills is the newest, gated, most clubhouse amenities, but is also likely to be higher prices to reflect this from what I've found.
Good luck finding something. I really enjoy going through all the available properties and finding just the perfect one for each situation, and we've rented many, many times!
