I've seen plenty of rides closed for lightning, but don't recall any closed for (ordinary) wind (short of hurricanes).
One thing that does come to mind when thinking WDW+windy is Fantasmic's water jets blowing water onto guests. While the ROL's water jets are better situated away from the audience, wind could maybe impact those as well.
The other thing potentially that comes to mind is the WDW watercraft. If winds are high enough to create a small craft advisory, then the smaller (and medium) boats might stop running. I can't say how WDW makes their determinations, but I've been at WDW on days when they closed the small rental boats, and even the medium shuttle boats.
I could also see high wind = no water parade if small craft warning.
