First of all...thank you sooo much for your advice. Thanks to those that responded to my original post, I was able to fix my reservation instead of showing up and having a ruined vacation.
We switched to a package, MYW 1 day base ticket with dining.
So here's what I'm thinking we will do, hopefully you can tell me if it will work. I will use my one day ticket, then go and use my GAD voucher the next day and THEN I will upgradeoff my voucher for 2 more days. Does that make sense?

Yes, you can do it.

Now, if you knew you were making another trip (for which you wouldn't need to get yet another base ticket), then you could pocket the 1-day ticket for the future trip and upgrade, and just use the GAD ticket this time. This would save you a bit more money in the long run (especially if ticket prices go up), but since you are talking about a relatively short trip it probably wouldn't matter much.

Edit: Thinking about the numbers more, you need 4 total park days. All amounts do not include tax.

A 4-day base ticket is $225. If you were to upgrade your GAD ticket to that, it would cost you $146.

A 3-day base ticket is $219. If you were to upgrade your GAD ticket to that, it would cost you $140.

Your 1-day base ticket from your package nominally costs $79, which you've paid for in your package. If you use that instead of upgrading the GAD ticket to 4 days, then you are LOSING $73 of value.

You and Cheshire have been AMAZING at answering all our questions and concerns. If it weren't for you guys, our vacation would have been ruined because we were not told that you couldn't add the dining plan upon arrival. I truly appreciate then help and advice. THANK YOU again...

FYI, I updated my original answer...I'd read it again.

Edit: and THANK YOU!!!!
