Will I be disappointed with these restaurants?

We have usually received good to very good service at Disney restaurants, however the food is never as good as it should be for the price tag, in my opinion. The only restaurant on your list that we have tried is 'Ohana. The service was excellent and the food was good, but not great, on our first visit. The meat was a little disappointing. The food was better on our second visit and the service was good, except our meal was very rushed in the beginning. We don't get the DDP, but I think 'Ohana is a good value for 1TS credit per person.
 
I am planning my ADR's and I am a little worried that I will be disappointed with the quality of food/service at my choices. We do appreciate good food (my DH works in the restaurant industry) and bad service will likely ruin the entire meal for him. I wanted to do signature dining as I think it is more our taste, but since we will have our two children with us (5 and 2) and they are 2 TS credits each I am not sure that will work. Here are the restaurants we plan on visiting so far-- we still have room for 2 more 1 TS restaurants since I plan on paying for the Tusker House breakfast OOP.

Dinner: 1900 Park Fare, 'Ohana, Cape May
Lunch: Hollywood & Vine
Breakfast: Tusker House

Cape May Dinner is a must for us-Love the Seafood buffet and the deserts are really good!

Hollywood and Vine has some different choice than many of the other restaurants-we really liked it both times we've been there.

Tusker House is a great character breakfast with all the traditional breakfast foods and some ethnic items also.
 
The places you've chosen are all buffets or served family style ('ohana), and the only one on the list that favorably impressed me was lunch at Tusker House. I just ate there a few weeks ago. I used to eat there all the time years ago when it was a quick service location. I enjoyed it enough as a buffet that I would return.

Cape May was good, but I wouldn't go as far to say it was better than relatively decent. I've never been to H&V, and the rest are "just ok" to me.
 
If you are foodies, you will definitely want to stick to the signature restaurants! My husband and I are food people and we find that there is a huge difference in the quality of food between the 1 TS and 2TS (which of course is expected since you are paying twice as much)! We have girls who are currently 4 and 6 and we are doing almost all signatures in Feb. We did many on our 2 previous trips and you will never feel out of place with the kids. Kids are everywhere! My girls enjoyed these restaurants also because they could order food other than pizza and nuggets. They offer pasta, fish and steak on the children`s menu in many of these restaurants. They also have fun desserts for the children, like the rice krispie sushi at Cali Grill and the chocolate puzzles that they are encouraged to paint with edible paint at FF and I believe AP as well! They will have fun and you and your husband will enjoy the food. Our favourites are Cali Grill, Citricos and Hollywood Brown Derby.

After all this is said, of course we do some character dining. In our opinion, 1900 PF dinner was the worst meal we had at Disney, but the character interaction is great!

I think you'd be soooo much happier with the deluxe dining plan. Then you could do a breakfast buffet/family style each day for the kids and a signature meal at night. Tusker House is a great breakfast choice. In MK we like to do Crystal Palace before the park opens. DHS I think H and V is fine for breakfast if your kids are into the characters. Ohana breakfast with Mickey, Lilo, and Stitch is one of our faves because it's served family style so more relaxing than a buffet. For dinner I think any signature will meet your needs for adults and kids. The kids meals at signatures aren't much more expensive but the quality, selection, and quantity was better. If you do deluxe you will also get appetizers so you really should have plenty of food for the 2 year old. Our faves are CA grille and Yachtsman Steakhouse. My kids really enjoyed the better quality of food and calmer atmosphere after busy days in the parks.
