I will be spending this Sat and Sun in Epcot. I plan on getting G+ tomorrow and riding most of the rides then spending the rest of the day eating at world showcase. I won't you G+ on Sunday but spend more time at world showcase.

I just recently saw a post here that said Epcot is nuts on the weekends which makes me nervous. Will I still be able to fully enjoy Epcot?

The lines for booths and World Showcase tend to be more crowded on the weekends and especially later in the day. So I would try to knock out your must do rides early.

I plan on doing early entry and focusing on getting all of my rides done before noon!

Depends on what you mean by fully enjoy. With F&G just starting locals will be there but with two days and Genie+ you should certainly be able to hit all the rides. World Showcase will get more crowded toward night, I tend to stick to the front of the park Saturday nights.

What I meant by that is ride nearly all the rides and be able to go to some booths to try food and shop at the showcase. I am thinking of riding Most rides on day 1 then day 2 focus on the showcase eating+shopping, since on day 2 I won't have G+

There are only 3 rides at Epcot you would even need genie+ for. If you rope drop frozen one day and rope drop remy the next. I don’t really see needing it at all. If you single rider lane it on test track you won’t have much of a wait, and pretty much everything else has low points during the day. I have never had any issues doing everything I wanted at Epcot on a single day. With two days planned you will be fine, even on the weekends.
