Book them in advance and you should be fine. But if you are crossing over from another park you would only be able to get 1 fp at a time. You should be able to get something but whether it is a good one or not is really up to the crowds already in the park.
You will have options, but none are either good or necessary. Typically they are rides with 10 min or less SB lines, you may be in kiosk line longer than the SB lines on most of the options.

This. My guess is It's A Small World, Mickeys Philharmagic would be your choices. From experience this past week. The lines for the Kiosk were ridiculous for the choices you get.

Also depends on how late they are open and what time you plan to stay. You might get sat 10pm for JC or HM at 10PM if the park is open till 1. the 4 -7 hours are tough since the early day folks are still there and the night time folks are there so everybody is there.
I would say a very small chance of speedway, no shot at haunted mansion or jungle cruise. Those were gone for us on a 6 or 7 day at MK last year by afternoon. If they are available they will be very late when lines maybe already shorter park wide.

Not many. Swiss Family TreeHouse, Philharmagic,Carousel of Progress?? We were there on Wednesday and after 12 all the lines were LONG everywhere. I'm guessing Wednesday was a 9 or 10. We waited for the treehouse maybe 5 minutes.

This is actually somewhat promising for me as we are making our first non-April/May downtime trip this June. We have FPs for the big stuff very early, then plan to try to grab an FP for something else big before heading back to the resort after lunch. If the lines are short when we return later for some of the smaller rides, that beats the alternative, IMO!

Ha Ha - personally the TreeHouse is my least favorite in the entire park! I remember as a kid being in Disney and walking the TreeHouse on a HOT day instead of riding something, anything fun.
Right now the FP+ system is only Kiosk to get your additional 4th, 5th etc. FP. you can book your regular 3 on the app but after that you go to a kiosk for each additional FP. The lines are usually long at the kiosks even on a not so busy day (many of the folks dont "get" FP+ so go and get there 1st 3 at the kiosks).
