A lot of park hours have changed for November. In cases where Magic Kingdom is opening earlier than previously reported, will additional ADRs become available for booking? I'm thinking specifically of November 11, which originally had EMH at 8, now at 7:00AM.

No. Restaurant hours will not extend save over specific holiday weeks. Last week, a day changed from 8AM EMH and 9AM open to 7/8. Restaurants still started at 8 save Main Street Bakery for coffee early.
