Why does coffee taste different in the morning?

It tastes good all the time (unless it's cold), but I've noticed it tastes different according to what time of day you drink it.

Uncle Tony, Pop Daddy is right, it tastes better at night. I think it's smoother, richer, and more soothing at night. In the morning, it's a great perk me up.

It tastes best with dessert, preferably a slice of key lime pie.

But I'm loving my cup right now! A honking big carafe of Starbucks Dark Expresso Roast. Having been up since 4:15 am, I need it!
