Who do we contact for special dietary needs

My daughter has severe peanut allergy and we are going to WDW in December(that seems so far away) and I have seen it posted before but can not see to find my notes...who so we contact for special dietary needs? thanks for helping me...also if anyone has their own personal advice to resturants to visit or avoid or any other tips about traveling to WDW w severe peanut allergy I would love to haer them!!!
