I have frozen whiting fillets that I am preparing for dinner tonight. While I have eaten whiting, I have never cooked it at home. There is a dark skin on one side of the fillets. I was planning on breading the fillets and baking them. Does this skin need to be removed? I am afraid if I leave it on that it will be to rough of a texture and interfere with the flavor of the fish. I am looking at the skin and thinking that it may be difficult to remove. Any tips, suggestions or downright help would be most appreciated. Thanks for any help.

Well, looks like noone makes breaded whiting...lol. I knew we should have just headed to the local fish fry. That's what I get for bring inspired by the "eat at home" thread.:rotfl:

If there is skin on it, typically I broil or bake and not fry. I have never had whiting. Sorry.

you can fry it with the skin on. It is too much trouble to take off IMO.

I don't eat meat, but I do cook it.. and I personally would remove the skin before cooking the fish. You can make chips out of the skin and use it as a garnish!
