White chili recipe

I have the easiest white chicken chili on record:


4 raw chicken breasts cubed
4 cans great northern white beans drained
24 oz jar of salsa (I prefer black bean and corn)
cumin to taste

Throw all items in the crock pot and cook on low for 8-10 hours. Serve with cheese, sour cream, and Fritos.

DONE! (seriously, could it get any easier? :thumbsup2 )
 
I use the McCormick's White Chicken Chili seasoning packet, because I'm not creative in the kitchen at all. All I have to do is cook the seasoning, some chicken, and some northern white beans in a saucepan. Then I serve it in bread bowls; usually some kind of large day-old rolls that I hollow out a bit.

I haven't made this in awhile...it's sounding pretty good about now.
 

I just wing it, but here what I do. The spice amts are an approximate.


3-4 chicken breasts, cut into pieces)
1 med onion (chopped)
2 tsp cumin
a little chili powder
1 tsp adobo seasoning
salt/pepper
2 cloves minced garlic

Saute this all together in a stock pot until meat is cooked through

add
2-3 cans chicken broth
1-2 cans chopped green chilis
2-3 cans, of whatever while beans I have (cannelloni, northern) I sometimes put black beans in,--Rinse before adding

Simmer on stove until thickened- about 1 hour

when in bowls, add a spoonful of sour cream, colby jack cheese, and a few crushed tostito chips (or whatever mix of these you like)


I just made white chili on Sunday--So GOOD!
