Which rides/ attractions or restaurants would be the best for adults?

Really vague question, but I'll do my best.
If you're looking for "nice" places to eat, at DL it's Blue Bayou; DCA it's Carthay Circle; at DLH it's Steakhouse 55; and at GCH it's Napa Rose.
For your other question, you said "resort" so I'm assuming you're talking about staying onsite. All the hotels are nice. DLH has a more "Disney" feel to it.
Keep in mind that the Disneyland parks are packed with kids and was designed with families in mind. There isn't an adults only section/hotel/restaurant.
