As the title says, which restaurants do you need reservations and how far in advance. I know we do for Blue Bayou, any others?
 
pretty much any sit down restaurant, if anything just to be safe. Make Blue Bayou way in advance we needed to make ours 3 days in advance, we went last week and got the last available reservation for Ariels Grotto so definately that one.
Honestly the parks have been busier than expected so make resrvations whenever and wherever possible
 
A lot depends on the time of year and the time you want the reservation for.

For dinner at Big Thunder Ranch Barbecue, wait times are often over 1 hour for walk-ins. Definitely make a reservation for dinner, and for lunch if you're coming after 11:40 or so. Same day reservations are still usually available if you come by early in the day, unlike Blue Bayou which is often completely booked for the day before they open the doors.
 

You can make priority seating arrangements up to 2 months in advance (so for Aug 16, you could make reservations Jun 16, etc).

You should make PS arrangements for Blue Bayou if you want to eat there. Most restaurants don't fill up way in advance. I have called before 3pm for same-day dinner arrangements. However, if you go at a busy time, or on the weekends, I recommend making these arrangements a few weeks in advance.

In the parks you can make them for Blue Bayou, Big Thunder Ranch, & Cafe Orleans (Carnation Cafe is currently closed). All character meals take them, as well as Downtown Disney and hotel restaurants.
 
My suggestions for reservations are~

Blue Bayou (must have)
Cafe Orleans (we've been turned away because they are full)
Carnation Cafe (currently closed)
Ariel's Grotto

All others we've been lucky to simply walk up, including the BBQ, but when it's busy it's harder to get in. We tend to go at off times (like around 2 pm) tho so that's an advantage for us.
