Which park to do first...and fastpass?

I've read forum after forum but still a bit overwhelmed with planning our trip. Our trip is right around the corner! We leave for Disney on Saturday, Sept 17 and will arrive around 1pm. Check-in is not until 4pm and we will be staying at the Wyndham Bonnet Creek. We are a party of 5...3 adults, 11 year old and a 4 year old (42" tall)

My plan so far is this:

Sat. Sept 17: ??? - not sure since we are arriving late (Illuminations?)
Sunday: ??? - not sure
Mon: Epcot
Tues: Magic Kingdom + Mickey Not So Scary Halloween
Wed: Animal Kingdom
Thurs: Hollywood Studios - is this when we should see Fantasmic?
Fri: ???

Can anyone recommend what to do for Sat evening and what to do Sunday? We have a 7 day park hopper ticket. We will have a vehicle, if that matters for park hopping?

Since we have park hopper tickets, is there anything we can take advantage of with these?

When should we do Illuminations? Any specific rules I should know about since I have a 4 year old? Do we need to be there SUPER early?

We want to eat at 'Be Our Guest', which night is best for this? I do know about making a reservation but they are all gone on the app. But I read that I should reserve 2 days before due to people canceling their reservation to avoid a charge.

Fastpass - this is hard for me to plan since I don't want to make a fastpass for 1 ride and then the next fastpass would be across the park and miss it.

Any advice or recommendations would be greatly appreciated!! TIA!

Youre only planning to do MK once?? i'd go at least twice. So maybe go to MK on the friday before you go home?? Great park to choose to end the trip!! Dont miss wishes and main street electrical parade since its permanently being axed Oct.9! With kids their age, they'd LOVE to do that park twice im sure. So much to do!!

RE: Fantasmic...have you checked the schedule on the disney site? i'd definitely see it while at HS. Alternatively, if Star Wars fireworks is on the schedule the same day, i would probably go see that instead. Im probably in the minority but I just didnt care for Fantasmic.

For the days where you know which park, book your 3 FPs especially for Epcot and DHS.

Read the FP FAQ at the top of this forum for booking suggestions.

You can easily park hop between Epcot and DHS without using your car. You can also get from MK to Epcot via Monorail.
