Online is so much easier.
This might be (and I'm just guessing) because when you put in a time, the system gives you a 2 hour window either way of the time you had put in. So if you had put in for example 8pm, the system looked for a time from 6pm-10pm if it didn't have exactly 8pm. Or it could have been someone just cancelled in the time between looking on line and calling. Yes it can happen as I just got a reservation last night for a perfect time for this Saturday for a restaurant we wanted. We had a time we didn't really want since it was a bit too early. I had checked ALL DAY for the past few weeks. Curious I checked very early morning for the one I cancelled and it was gone.
I would practice too booking online so you are comfortable with it and know what you are doing. You don't have to actually submit at the end.
About 1 1/2 months before our trip, I tried to get ADR online for T-rex at DTD. The only res they had available was 9:00 PM. I called them instead and got a 5:30 PM res. We were seated almost immediately. Less than 10 min. wait.
I'm not sure how this works with the other restaurants. Good luck!
