Which excursions?

Well, we're taking Disney cruise #4 this August doing the Western Caribbean this time. Knowing next to nothing about Grand Cayman and Cozumel, what side trips do you recommend we do. I've heard the Stingray City one is very good in Grand Cayman. Any beaches/restaurants you'd recommend. I have two kids - 20 and 16...Can you book these side trips in advance?
Can you book Palo now in advance or is that strictly the day you board. It's been awhile since we cruised - can't remember the small details, but can't wait to go!!

Hi Toby! In Cozumel I would personally recommend Wild Tours ATV adventure. It is not offered by Disney, yet we found them to provide quality service with reasonable pricing. The tour consists of an extensive ATV ride along an off-the-beaten-path trail, ocean kayaking, snorkeling from a rather secluded beach and a brief stop at a very local Mayan temple ruin. While pausing at the beach, Wild Tours served ice-cold bottled water and Coke. It is a terrific shore excursion.

One word of caution. Make sure everyone in your party relieves themself prior to arriving at Wild Tours departure area. They offer a choice of two restrooms: one is an unkempt porta-potty which my son said "stunk worse than any Billy Mays' commercial;" the other is the great outdoors. A nearby open-air restaurant had improved facilities. Still in all, the men's room had no tissue paper and a sign in English warned of a fine to anyone caught flushing paper down the commode. To date I don't know how the management would catch an offending party, nor do I wish to offer conjecture on this family web site...
