Mandy, we did Playa Del Sol and had a great time. As an excursion (you can do it on your own, i believe) we got chairs, floats, umbrellas, all our beverages (sodas for DD and beer for us). There is a restaurant, but we didn't eat there. They have a pool with a swim-up bar (oh yeah, we did get a plate of nachos, they were pretty good). They also have showers.
And if you like to play in the water they have water trampolines, and climbing wall (looks like a big iceberg), paddle boats, kayaks and there is place that rents wave runner, but seemed expensive, especially since we can do that at home.
All in all, it was a nice afternoon.
