... invite some audience members to be a part of the show in one way or another? Obviously Jedi Training does this. I am curious which others might as well?

Indiana Jones Epic Stunt Spectacular (DHS) Adults "extras"
Frozen Sing-Along Celebration (DHS) All audience members can, well, sing along
Captain Jack Sparrow's Pirate Tutorial (MK) mostly Kids
Move It! Shake It! Dance & Play It! (MK) All guests invited to dance along
Enchanted Tales with Belle (MK) Guests (mostly kids) play "roles" in the show
Monsters, Inc. Laugh Floor (MK) "That Guy" spotlighted for interaction, all guests asked to text jokes
Turtle Talk with Crush (Epcot) Kids ask questions, Crush interacts with Kids and Adults

There are various isolated "bands" and other performers around the parks.
Particularly in DHS ("Streetmosphere" characters) and MK ("Citizens of Main Street.")
These individuals and groups can interact directly with guests in various ways.
Some will invite guests to dance and/or sing, and otherwise react to/with them.
