Which day would you choose for Epcot and DHS?

I'm so stumped on which days to plan for Epcot and DHS for my upcoming trip this November! Our park days are Monday, 11/7 through Friday, 11/11 (Veteran's Day). We're getting 4-day tickets, since Thursday the 10th is our MVMCP day, so we'll plan to sleep in and hang out at the resort and then enter MK at 4 PM. So we're locked into MK that day, and also on Tuesday the 8th, since that's the day my brother and his family join us- it's my 3-year-old niece's first time ever at a Disney park, so starting at MK is a must! Which leaves me Monday the 7th, Wednesday the 9th and Friday the 11th for Epcot and DHS. Which would you choose for which days? Initially I was thinking Epcot on Monday the 7th, DHS on Wednesday the 9th, then Epcot again on Friday the 11th with a Harmonious dinner package. But since then, realizing Friday is Veteran's Day AND the second-to-last weekend of Food & Wine, I wonder if Epcot will be insanely crowded on Friday and if we should save DHS for that day instead? In which case we'd do Epcot Monday and Wednesday...

I haven't included AK in any of this since we have two great zoos near us (the LA and San Diego zoos) and wanted to make sure we have enough time for 2 days each at MK and Epcot and at least 1 at DHS, but let me know if I should reconsider AK and even Universal! Our flight also doesn't leave until 5:30 PM on Saturday the 12th, so I could technically add another day, but I was thinking it might not be worth it with Veteran's Day weekend crowds. We're also not getting Hoppers, just 1 park/day, since our kids are so young and I doubt we'll make it through more than one a day. However, we are staying at the Polynesian our last 3 nights of the trip, so a Hopper might be worthwhile for the monorail parks on just those days?

I realize I've asked a bunch of questions in this thread, but I would be SO grateful for any and all advice! This will be our first family trip to the World and I want to do it right! <3
