Which day to go??

We are doing one day at Universal to see the Harry Potter sections of both parks. We will have a 2-park-1-day ticket and are not staying at a Universal resort (I don't think... plans are still fluid). Possible dates are Sunday, Dec. 22, Monday Dec. 23, or Tuesday Dec. 24 (although we may go to Epcot that day). What do you think I should plan?
