where would you go...

hi everyone, I have to say everyone's advice has been invaluable in planning our first trip to Disney. I was hoping you all could help me decide what to do here:
First of all we have the diing plan - it is dh and I and our four children (youngest is 2) For the most part because I think the kids will really enjoy the character meals our diner ressies are where I am using my sit downs.Here is our schedule so far.I plan to use our cs options at lunch and don't intend to plan them for the most part.

Saturday may 21

dinner at Chef Mickey's

Sunday

PSB dinner

Monday
I was able to get breakfast CRT - but only for 2, I am thinking maybe let dh take dd or myself take dd. Feel bad - but all I could get was ressie for 2 and boys hopefully won't mind!


dinner at 1900 park Faire

originally had planned to do Fantasmic dinner package at Brown Derby (only onje available) but the more I thought about it I came to the conclusion it just may not be for us. Dinner is at 3:40, show at 9:00 and I am unsure if any of the kids would make it through w/o being frightened - I hate to plan my day around something they may be scared of!! Not to mention I caqn not use my dining plan here. So I have booked dinner at Crystal Palace and think i will cancel the Fant. package - any thoughts?

Wed (our big day!!)
Big family get together dinner at Ohana's and then fireworks cruise for ds' bday!!

Thursday
probably only will have bfast as we found out after planning trip dd's dress rehearsal for recital is Friday night. We are driving so we will have to leave a day early (or skip the dress rehearsal.....very tempting)
so is there any bfast you just would not miss??

So my question is - I would really like to have at least one dinner where we can sit down and take advantage of the dining plan to the max - apps all around and of course filet or prime rib!! Lobster possibly - though I do not like Fl. Lobster (sorry) We are actually not a seafood family, so those sit downs are out. Where would you go and what would you cancel? There are only so many dinners we have there and I just want the kids to enjoy themselves (and dh and I too)
Would you -
cancel Chef Mickey's or Crystal Palace for dinner and try instead for bfast? Which one has the better bfast? Or would you cancel one of the other dinners and do bfast or lunch instead?
And if you had a choice of any restaurant where would you go to really splurge for a night?

FYI - we are very down to earth people and fancy does not necessarily impress us - but good food does. I want somewhere my children will feel confortable. I don't want snooty people waiting on us, just really good food!!
Also I am not so worried about meal plan credits as I think we will have the extrqa day of dining because we are leaving early, also I plan to try some of what everyone has suggested and pay for kid's meals if necessary to stretch those sit downs out!!

A very nice restaurant to "splurge" on (if you have the extra dining credits) would be LeCellier at Epcot. The food is very, very good, and my kids have always felt comfortable there--it's a friendly place, and not snobbish at all. It is a signature restaurant that requires two credits, but it is one of the best Disney restaurants.

Over the years, our kids (especially when they were younger) seemed to enjoy character meals more at breakfast or lunchtime. By dinner they were too tired to really get into it. We do Disney every year, and one thing we never miss is Donald's Breakfastsouras (SP?), which is our favorite character meal.

You have made some excellent choices and have done your homework!! Hope you have a wonderful trip!

Just one thing. If you really want to do Fantasmic package, but just don't like the time you have. Try 30 days out. They often open up later seatings.

Yesterday I wa able to book a later time, and MM, which is the restaurant we wanted to go to in the first place.
 
WOW ! You guys are great thank you,so much to think about - just when i think i have it all planned I read something someone posted and want to try that!!!
I guess I really need to figure out what I want to do before I make ps' willy nilly!! I have already changed about 5 of them!! they are going to put a "do not reserve" flag on my name! LOL!

As far as Fantasmic goes, how scary is it? I think it looks wonderful, but my dd even got freaked out going to see Polar Express at the Imax in 3d. Do you think it will be too much?/
