Where to send a note of thanks

I always have the best intentions of sending a note regarding an extra special cast member we had encountered, but I do not know where to send my correspondence. I vow to do so for our upcoming trip! I am taking note cards and stamps with me. Can anyone tell me where to mail or who to address my letters to. Any help will be greatly appreciated!!!!!!!
