St. Lucia is beautiful and the people are sooooo friendly.
I stayed at Sandals (Regency) but I toured around the island and not only was it beautiful but I always felt safe.
In college I spent a semester in Barbados. Its beautiful there and very safe. There are "dirty" areas (I had been repeatedly warned by people who had only been their one day on a cruise stop that it was very dirty), but those places are mainly the industrial areas and once you get away from the port and main town its gorgeous. The people are very friendly. I went all over the island and there are many fun activities, good food and shopping, and jaw droppingly beautiful sights (pink sand beach with the bluest water you've ever seen). The resorts there (I was in a dorm but saved up enough to sample a few on the weekends) are great and prices are reasonable. I would love to take my family to there.
I'm really looking forward to visiting the Grand Caymans as part of our Disney Cruise next Dec. I've heard wonderful things about the Caymans too.
We loved our E carrib. cruise. It gave a good sampling of the islands....My fav part was the day at the cruise lines private island....the best....I wish the cruise line would offer a couple islands and then a couple days on their private island, with the ship as the hotel....
Saint Marten! Stay on the Dutch side and rent a car. The food was fabulous and we never had a problem driving around the small island to beach/bar/restaurant hop. My Aunt has a time share there and we have gone as a family (me-21, Dsister- 18 and cool parents) last year and will be going back next year. My dad has gone diving there and there is snorkling off the beach. Depending on your resort there will be children but if you go to a secluded beach you will definitely be alone.
Just watch out for the nudity on the French side beaches if that bothers you! (It bothered my dad more than it bothered us girls!)
Went there this past summer and it was absolutely fantastic. The people were very friendly, the beaches were like postcards, and the dining was first class! We stayed at the Fairmont Royal Pavilion which is adults only.
