Where do you store your baking powder?

I think I made a budget purchase and bought a very large container of baking powder from Costco. I do use baking powder at least once a week. It says to store in a cool dry place. I usually store it in a kitchen cabinet but that's not really cool. Btw this baking powder has no sodium aluminum phosphate but my last container, another brand, has the sodium alum. phosphate not sure what's going on with that:confused3
 
I store mine in a kitchen cabinet but it is as far from the stove as it can be while still being in the kitchen.

The sodium aluminum phosphate is a leavening agent just like the sodium bicarbonate. It's found in "double acting" baking powder.
 

I took a cooking class once and the teacher said to keep it in the fridge.

I would be concerned that it would pick up food odors from the fridge. Do you transfer it to a different container? The one that my baking powder comes in is a cardboard canister.
 
Once a can of baking powder is opened, it is only good for about six months, so I always buy the smallest possible container, but still end up throwing some away unused. I learned the hard way, by having some lead weight muffins and cupcakes, not to use stale baking powder or stale baking soda.

You can test baking powder by putting 1/3 tsp baking powder in 1/3 cup hot water. If it bubbles, it's good.
 
I've read too to keep it in a cool dry place but not the fridge because the air is too moist in there. Here is recipe for making your own: for 1 teaspoon of baking powder: mix 1/2 teaspoon cream of tartar with 1/4 teaspoon of baking soda and 1/4 teaspoon cornstarch. I haven't tried this yet but would like to substitute arrowroot powder for the cornstarch the next time I need some. The aluminum containing baking powder is something a lot of people try to avoid, I only just discovered it contained aluminum 2yrs ago when we were making the switch away from aluminum containing products.
