We went to Cancun for our honeymoon and loved it.
Right off, I have to tell you to price the resorts you're interested in with a tour group (Magnatours, Apple Tours, etc.). The tour package prices were FAR less than what I could get doing things separately.
I don't think you can go wrong with an all-inclusive resort there. It makes your trip so much easier and more pleasant because all your meals and drinks are prepaid.
Next, even if they tell you tips are included, tip your waiters, bartenders, housekeeping anyway. A little palm greasing goes a long way down there.
We stayed at the Omni which, at the time, offered guests the opportunity to stay with or without the all-inclusive plan. I figured that if they were selling the same food and drinks as they were giving to the all-inclusive guests, it would have to be good.
And it was! The resort was spectacular.
