I apologize in advance if that's a dumb question or if the info is staring me in the face and I overlooked it (wouldn't surprise me  )

I think at the park counter service locations it's easier because you order first, so the cast member can correct you beforehand, but since the resort counter services you get the food first, then go to pay, it has me fearful that I'll get what's not included in the plan ~ for example, for the dessert included, do you get anything from the bakery area or fruit, or are their limits? For drinks, could we grab a Nesquick, or does it have to be a soda or small milk? If say at dinner time they have a carving station (they did the last time we went to POR) ~ would that be a quick service, or does it have to be combo basket fare?

Again, I do apologize, I am just trying to get an idea as to what to expect beforehand

You can always ask any of the cast members serving if it is available on the dining plan. There aren't really any restrictions that I know of like the ones you mention. You can get any of the desserts, be it ice cream, milk shake, cheesecake, cake, cookies, etc. You can get Nesquick or juice for the drink. I'm sure the carving is included as a meal...you're not limited to burgers and nuggets! You can get pasta, salads, wraps, chicken, roast, fish etc.
Two of my favorite places are Sunshine Seasons in Epcot, and Wolfgang Puck Express in Downtown Disney. At Sunshine seasons I have gotten salmon, rice, carrots, apple juice, and key lime pie; or a selection of oriental food, cake, and large chocolate milk. At Wolfgang puck I have gotten chicken pasta, salad, iced tea, and creme brulee. Counts as a counter service. :)

when we were at Pop Century last September......there was a CM (manager I believe) with a notebook and was telling people what they could have and not have on the plan......I thought this was very helpful for those with the ddp.......he even asked if I needed some help......but we were OOP that trip and only wanted to know if I could purchase a kids pasta dinner as a diabetic that cannot eat all that would of been given on an adult platter.......so it helps to ask.

Good luck and have fun
