When to do all the "extras"

We received our tax refunds and it covers our hotel stay! We have already paid off our flights and bought 5 day park hoppers. Now we're saving for all of the "extras" that we want to do this trip. This will be our 3rd trip, and likely the last one for a couple of years since I'm planning to save up and start on my masters in the fall of 2014 when DS starts kindergarten. This trip it will be me, DH, DD turning 6 and DS3. We will arrive on July 17th, be in the parks Thursday July 18 until Monday July 22 and fly home early on Tues July 23rd. I'm having trouble trying to figure out what to schedule for which days/times. My birthday is Thursday July 18th and DD's Bday is Sunday July 21st. Here are my extras:
BBB for DD (would like to do on her actual birthday)
Fantasmic dessert seating
Discover the magic tour (fri, sat or Sun)
WOC - but probably not dining package
Surf's Up breakfast
Minnie's breakfast (I don't really want to do it again, but DH wants to)
Goofy's Kitchen for dinner
Ariel's for lunch or dinner

We're staying onsite, so will have early entry every day. Hopefully both parks will open early every day in the summer.

Any suggestions?

Do you have plans for your arrival day, the 17th, yet? I would do Goofy's that night since it doesnt require park admission, and it will get you in the Disney feel
