When to book

I think we've decided we'd like to do Disney again this fall (October as that is when DH has holidays), too bad we'll miss out on the free dining. OH well! Anyway, just wondering if we should wait to book? I'm assuming that isn't a busy time of year, so hopefully we can wait to see if their are other deals, or flight seat sales. What do the experts think? Should I wait? and how long? Thanks
