Hotel, ASAP, because you can always re-book later if the rates get better. Right now, HoJo is showing their unbeatable Entertainment book rate of $59-$79 a night for your dates.

I would call soon on that, though, because they do sell out of those rooms at the Ent rate. (BTW, you need to call the hotel directly and ask for IN HOUSE reservations to get that rate. The national reservations line can't help you with it.)
Airfare... well, depending on where you're coming from, the rates are pretty good right now. You might check on Farecast.com, to see if they have any suggestions of if or when the airfare might go down. Be sure and check several airports, too-- SNA is the closest, but LGB and LAX are often the cheapest.
Park tickets; doesn't matter, really. They don't really have promos after the spring season, like the current ones of 5 days for the price of 3, or adults for kids' price.
I would suggest booking these things separately. It's possible to book everything through Disney Travel, an airlines, or another
travel agency, but usually you can save money by booking it yourself, separately...sometimes hundreds of dollars.
Also, you mentioned taking two days for the park with a possible third... I would definitely try to make it for at least 3 days. With a 3-day parkhopper, you'll get one Magic Morning (early entry), and it really takes 3 days to be able to see the parks without feeling rushed and overwhelmed. I actually prefer 3 full days and 2 partial days (arrival and departure days).
