When to Book Dining/Events?

I have several things that I am planning on doing, and I don't want to miss my booking window for any of them. Can you please double check my timing?

Fantasmic Dessert Party- 1 month out. Check in around 7:30ish that evening.

Carthay Circle- 3 months? or just 1?- If I want this for the first WoC show, I need to book a dinner around 5. Is that correct?

Napa Rose Chef's Counter- 3 months out. If I book the 5:30 dinner, what are the odds of making it to the fireworks for a decent spot afterwards?

I thought dining was two months and events like fantasmic was one. So one month for Fantasmic, 2 months for CCT, and 2 months for Napa Rose, unless the chef's counter is different since that is booked though the restaurant directly.
