I know this is probably a dumb question but is there a time when there are lower crowds on the the fantasy/dream ships.

We just returned from a 7 nt on the Fantasy and was surprised how many people pulled their kids out of school for the week...it was great to see as I was (almost) feeling guilty about taking my two kids out for the week. We were in good company! The cruise was full but never felt crowded. There is so much to do and so many activities to choose from that it didn't feel like too many people. Same for cabanas buffet. Always found a table no problem.
We also cruised in Janary on the Dream and had a similar experience. Never felt overwhelming. Happy Cruising!

Texas state law will not allow you to take kids out of school to go on cruise, unexcuied absents. They fine parents for unexcused absents and it gets to be a stiff fine. This hurt DCL in is attempt to spread its wings. Texas had large population and port and airport were very convient. They had to do everything to fill ship. We were able to take advantage of KSF. We were very sorry to hear after Wonder leaves in Jan 2014 that is the end for DCL out of Galveston. It was 5 hours from front door in LA. Well NOLA is bidding hard for a DCL ship, its 56 miles away.
The least crowded time is if you do not get off the ship when it is in port or if you come back to ship early. We did not book any excursions in the Bahamas we got off the ship for awhile to shop then we returned to a very empty ship. No lines for the aqua duck, kids loved it.
