Where can you make reservations for the restaurants? Just thinking that it would be cool to get started in the park on monday and book our meal when we are there for the evening, or do we need to do it at conceirge?

You can make your reservations at City Hall. They also have the menus of all the Disney-restaurants there, so you can ask to consult them first, if you want to be sure they serve something you like.

We usually make our reservations in the afternoon for the evening of that same day.
Once, we couldn't decide which restaurat at the NPB we wanted to eat at, and they made a reservation at both restaurants, and just told us to choose at the moment itself!

If you know where want to eat you can book in advance by ringing

33 (0) 1 60 30 40 50 from 9am to 10pm daily. I think you can book up to 60 days in advance.
