would I be able to book 12 nights at my home resort or can I only book a week at a time? And if so how do I book the remaining nights if I can only book 7 at once?

If you are exactly 11 months out from the start of your reservation, you can book up to seven nights. Then you can call each day and add another night to your reservation until you have all 12.

If you are five days past the exact 11 month check in, you can book all twelve nights.

You could wait until five days out (after booking the first seven) and add the five nights as well.
