When do you notify Remy... ?

A few questions ahead of dining at Remy. This will not be my first time eating, but the person I'm cruising with has not been and has a shellfish allergy. Additionally, for the first time I/we are doing the wine pairings, too. Are these things I should email before the cruise, tell the dining team in the DCL Navigator App on Day 1, or wait until we sit down to actually eat the meal? Thanks in advance for those in the know!
 
When I dined at Remy, I stopped by on our first night to make sure dietary restrictions were noted on our reservation. For an allergy, it wouldn’t hurt to call before the cruise to add a note about the allergy on the cruise reservation, just to make sure the main dining team knows about it — the note should also be visible to the Remy team, but I’d stop by anyhow. The head server in the main dining room should ask guests on the first night about allergies and restrictions, but having advance notice will help the serving team keep an eye out for items that may contain shellfish and suggest alternatives.

The wine pairing does not need advance notice.
