If US and IOA are open until 6pm when do you have to leave by before the gates are closed and does eveyone decend on City Walk for a couple of hours?

The gates would close at 6pm and no one else would be allowed into the park. The TMs will come around and do a park sweep probably within the hour of closing. Some people do head to CityWalk while others head to the hotel or home.

When the parks close at 6 and you want to eat at City Walk, try to be at cw before 6:15 to avoid a wait.

The restaurants start to get very busy around 6:30-7ish.
After that, you tend to have wait periods for dinner.

Yes you have to leave by 6. Citywalk is busy until 2am when everything closes.

The way the closing sweep works is: at closing time the doors to the attractions and shops (except the ones in the Port of Entry) close. If you're inside, you get to ride or finish your shopping. As each ride or shop closes, security is notified and they start nudging everyone gently toward the front of the park. The time from the beginning of the "sweep" until the park is called "clear" can be anywhere from 30 to 90 minutes...depending on how many guests are in the park at closing.
