We have always needed three beds for our family of four. DD15 is a horrible kicker, and we all refuse to sleep with her. We were in Germany a few years ago, and the hotel gave us the wrong room, so DD and DS (now 17) had to share a sofa bed. DS ended up sleeping on the cold floor it was so bad!
In 2011, when the kids were 7 and 9, we stayed in a bunk bed room at Wilderness Lodge. It was fine, but that we trip we decided that DVC was going to work best for us. Now we typically stay in one bedrooms that have a sofa bed and sleeper chair or Murphy bed (DD is only 5’2”).
On non-Disney trips we almost always stay at Springhill Suites or similar that have 2 beds and a sofa bed. Or we rent through VRBO or homeaway for a condo/house. We are all much happier when we have our own space!
