I love all of the "extreme" rides:

Soarin'
Rock 'n' Rollercoaster
Big Thunder Mountain RailRoad
Splash Mountain
Space Mountain
Expedition Everest
Kilimanjaro Safaris
Tower of Terror
Mission: Space [Team Orange]
Test Track
Star Tours

And then I like Cinderella's Carosel and The Carosel of Progress, but those aren't extreme.
