What's your favorite marinade for grilled chicken?

For something spicy:

*1 can chipotle peppers in adobo sauce (easy to find in the supermarket; mine is in the "International Foods" aisle near the Goya products)
*1/2 onion, sliced
*3-5 cloves garlic, smashed
*1/4 c. olive oil
*2 tb lime juice (can also use 1/4 c. orange juice for a sweeter marinade)

Let it sit in a covered pan/ziploc for 1 hour (for lighter spice) to 4 hours (heavy spice). Overnight will make it very spicy.
 
All of these sound good.

I like to use sun dried tomato salad dressing. I can't remember the brand.
 
If you have a Wegmans near you, I *love* their Chicken BBQ Marinade. It's not tomato based but rather a vinegar/citrus base (though it doesn't look like that). I like to let the chicken marinate overnight in that -- it's so moist and yummy!!!

I also use the McCormick's Grill Mates Baja Citrus marinade. That's the one I use when I forget to put the chicken in the Wegmans marinade the night before I want to grill/broil it. :-)
 
I've done some of the suggestions on this thread. I also like a good balsamic vinaigrette as a marinade. Sometimes I'll rub some pesto on the chicken (but that's for baking).
 

I make a balsamic marinade with:

Balsamic vinegar 1/4 cup
Olive oil 1/3 cup
Dry Minced onion 5-6 shakes from the bottle
Crushed garlic 1 tsp
Salt 1/4 tsp
Dijon mustard. 1/2 tsp

All measurements are approx. I let it sit in the fridge for a few hours before cooking it. I'm sometimes off on the oil-vinegar ratio so I'll set them on paper towels after cooking.

You could add pepper too but I don't care for it on chicken so I skip it.

This sounds terrific and will be how I make my next batch of chicken.
 
MMMmmm, thanks for all of the suggestions.

Going shopping tomorrow and I'll pick up a couple of those McCormicks spice packs.

I also will be trying a few of the marinades that many of you have posted. They sound so simple yet so good.
