What's your best mealoaf recipe?

Making meatloaf tonight and I can't find a good recipe that I like, what's yours?
 
I don't really have a recipe. I just throw in some crushed up saltine crackers, add an egg, throw in some BBQ sauce. Mix all that with the meat and shape it into a pretty shape and bake. That's it.

My kids love BBQ sauce, it gives it just a little bit different taste.
 
here's mine-my DH thought he hated meatloaf till mine;)

Meatloaf:
1.5 lbs meatloaf mix-mix of beef,pork,veal
1 cup seasoned bread crumbs
1 cup milk
1 egg
1/4 cup chopped onion
1 tablespoon Worcestershire sauce
1/2 tsp pepper
3/4 tsp salt
and a good size squeeze of Ketchup
Mix all ingred. and put into loaf pan or casserole dish
On top of meatloaf add 1 15 oz. can diced tomatoes. (I use the one that has the basil,oregano)
Bake at 350 for between 1 hour 15 min to 1.5 hours.

I like the McCormick mix meatloaf seasoning packet. I follow the basic recipe on it, except I add onions and increase the amount of bread crumbs. Also, I add the ketchup to the mix instead of putting it on top.
 

My meatloaf is measured by eyesight but I will do my best.. It is moist and my kids love it, so it has to be pretty good.

1 1/2#s ground beef
1 heel and 1 slice of bread finely ground, milk to soften
1 egg
1 small handful of parmesian cheese
couple shakes of garlic and onion powder
one shake italian seasoning
couple squirts of ketchup, one squirt of mustard
3 shakes of worchshire sauce

Preheat oven to 350 degrees

Mix to combine. Make a loaf, flatten a line down the center. Fill the flatten part with ketchup, then sprinkle brown sugar over. Bake 1 hour or til 160degrees and no pink inside...

Okay, my recipe written down looks the opposite of anything I have seen in a cookbook:lmao:!
 
Beef
uncooked oatmeal
ketchup
chopped onion
worcesteshire sauce
garlic powder
s & p to taste.

tonight I put it in a pie plate so I can cut it into 6 even pieces and it won't take as long to cook.

Meatloaf with Tomato Gravy


Meatloaf:

* 1/2 cup dry bread crumbs
* 2 tablespoons extra-virgin olive oil
* 1/2 medium onion, diced
* 2 cloves garlic, minced
* 2 teaspoons dried oregano
* 2 1/2 teaspoons kosher salt
* 1/2 teaspoon freshly ground black pepper
* 2 1/2 pounds meatloaf mix (or pork and beef combo)
* 1/3 cup grated Parmesan
* 2 teaspoons Worcestershire sauce
* 2 large eggs, beaten

Gravy:

* 1/2 medium onion, diced
* 3 cloves garlic, smashed
* 1 teaspoon dried oregano
* 2 tablespoons extra-virgin olive oil
* 1 tablespoon unsalted butter
* 3 tablespoons tomato paste
* 1 bay leaf
* 1 (15-ounce) can low-sodium chicken broth
* 1 (15 1/2-ounce) can crushed tomatoes
* 1/4 cup grated Parmesan
* 1 teaspoon red wine vinegar
* 1 teaspoon kosher salt
* Freshly ground black pepper

Directions

Preheat oven to 350 degrees F.

Toast the bread crumbs in a dry skillet over medium heat until browned and fragrant, about 1 minute. Transfer to a large mixing bowl and set aside. Add the olive oil, onions, garlic, oregano, salt, and pepper to the skillet and cook until onions are tender, about 8 minutes. Let cool slightly. Add the onions to the bread crumbs along with the meat, cheese, and Worcestershire sauce. Toss and mix gently. Add the eggs and stir to coat the meat completely.

Transfer to a foil-lined sheet pan and gently press into desired shape. Bake until an instant read thermometer registers 160 degrees F in the center of the loaf, about 45 minutes.

Tent the meatloaf with foil and let rest for 15 minutes while you make the gravy (or you can make the gravy while the meatloaf is baking).

Gravy: Cook the onions, garlic, and oregano in the olive oil and butter in a large skillet over medium-high heat until browned, about 6 minutes. Add the tomato paste and bay leaf. Stir until paste turns brick red and garlic is fragrant, about 3 minutes. Add the chicken broth and crushed tomatoes. Bring to a boil over high heat. Reduce heat to maintain a simmer and cook sauce until it thickens, about 5 minutes. Whisk in Parmesan cheese, vinegar, salt, and pepper. Discard the bay leaf and transfer the sauce to a gravy boat. Slice the meatloaf and serve with the gravy.

I've tried many different recipes and this one is our favorite. I found it in a Taste of Home magazine.

Mom's Meatloaf

Ingredients:
2 eggs
3/4 cup milk
2/3 cup finely crushed saltines
1/2 cup chopped onion
1 teaspoon salt
1/2 teaspoon rubbed sage
Dash pepper
1-1/2 pounds lean ground beef
1 cup ketchup
1/2 cup packed brown sugar
1 teaspoon Worcesteshire sauce
Directions:
In a large bowl, beat eggs. Add milk, saltines, onion, salt, sage and pepper. Crumble beef over mixture and mix well. Shape into an 8-in. x 4-in. oval in an ungreased shallow baking pan.
Combine the remaining ingredients; spread 3/4 cup over meat loaf. Bake at 350° for 60-65 minutes or until no longer pink and a meat thermometer reads 160°; drain. Let stand 10 minutes before slicing. Serve with remaining sauce. Yield: 6-8 servings.
 
One of the last wonderful memories I have of my step-mom Lorna was her showing me how to make her meatloaf recipe. We were having so much fun, she was so frail and sick, but we brought a chair in for her to sit in the kitchen with me and she told me what to put in it. BUT - I didn't write it down and now she's been gone for so long and I don't remember!
I know it had:
a grated potato
a grated carrot
Liptons Onion Soup mix
an egg

I don't remember anything else about it but it was AWESOME!!
Geez, it's been 17 or so years and I'm getting teary. I really loved her so much!
 
Dawn? Where are you? She has one that looks so yummy with cheese in the middle. mmmmm.

Me we eat one I make at the dinner places- you assemble there- We are all trying to figure it all out = there are crackers, milk, egg, beef and sausage meat- like 2 to 1 ratio- garlic, ketchup, bbq?, mustard onions and some other things we can't remember.

But you then top with BBQ sauce and pieces of bacon- oh and you make into mini loaves- so they cook faster and stay moist.
They are yummy. But so far have not been able to get it just right- we're forgetting something.
 
On one of the "What's for Dinner" threads there was a recipe for Applesauce Meatloaf. It was AWESOME!!!! It used lipton soup mix, applesauce, bread crumbs and a couple other things.
 
I do a simple applesauce meatloaf.

Start with a pound to pd 1/2 of ground beef.

Peel open an individual serving of apple sauce and add half the cup to the meat.

Add an egg, sprinkle in minced onion, parsley and a bit of sage, salt and pepper.

Mix with hands, and add dry unseasoned bread crumbs till the mixture starts to firm.

Shape into loaf. Place in baking dish. In the cup with 1/2 the applesause, squirt in some ketchup, a tiny bit of yellow mustard. Mix in some brown sugar till it has a nice sweet and tangy taste. Glaze top of meatloaf with this mixture.

I always have these ingredients around, so it's my default dinner.
 
DH makes meatloaf using 'meatball mix' (ground beef and ground pork), italian breadcrumbs, an egg, tomato sauce. He cooks them in muffin pans, instead of a loaf pan, so they cook in about 25 minutes, and have lots of crunchy tops and sides.

That glaze sounds great! (Actually, at first it sounded a little gross...ketchup and applesauce don't sound like they would go together.) But it sounds like a simple peppy glaze to make. I will definitely be trying that next time I make meatloaf.
 
I made dozens of different meatloafs I didn't like until I tried the recipe on the back of the Lipton Onion Soup box. It uses, of course, the soup mix, bread crumbs, ketchup, water and egg. I only use ground beef (no meatloaf mix with pork). It is so good, and so easy. The whole family loves it — even the picky kids!
 
We can't make meatloaf in our house...

My mom who makes great meatballs can't get a meatloaf to come out as anything like a brick...

Once we threw it in the garbage and when the racoons went through the garbage - they threw it back at us...

We just don't try... we eat it at other peoples houses...
 
Anyone have a brown gravy instead of a tomato/ketchup gravy to put on the meatloaf?
