What's the best way to make dining reservations?

Hi Guys need a little advice --

So I imagine I for sure need to make dining reservations for New Years Eve if we want a table service menu. Assuming there will be many other visitors trying to do the same thing, are my chances better if I make them myself starting as soon as the date is open, or letting vacation planning make them for me?

Also still a little unsure of how this all works. If I'm understanding correctly, I will need to give them $90.00 deposit (9 of us) for each reservation I make and if I don't cancel within the given time I will lose that. If I cancel how long before they reimburse my payment method? Do they just credit the money to our tab when we go? I'm sure I'm making more out of this than necessary.

My advice is to call directly yourself especially for a peak time...that way you have the option to make decisions and talk options with the reservation agent if your first choice is not available.
 
Online reservations are good but if you have time and patience, I would say call in if you have any questions about anything.

 
I would do them online. I don't believe they charge your CC before hand for the deposit, only after if you no show for the reservation. But, you can call to confirm.
 

There is no deposit up front, you leave your credit card number and if you don't cancel (there is a certain time period for each place) or show up, they will charge your card $10 per person.

Making reservations online at the Disneyland website is super easy, although with a party of 9 I am not sure how that works!
