I think it was Ocean "someone" who used to do these, but she hasn't in a few days, so I wanted to keep it going :goodvibes


I'm having a banana in a few minutes, and then around 3pm I'll be having one of my Campbells Select Harvest Light Soups.
The last two days I've been enjoying hummus with carrots and celery. Today I need a change!!!



What about you?
 
mmm Trader Joes Latkes!
 

Whole wheat pasta with red sauce (has ground turkey and mushrooms)
Carrots
Pear yogurt (YUM!)
 
Leftover Salsa Chicken over brown rice, saltines, peaches, and cranberry juice. Oh, three pecan sandies.

Ok - what is an oreo truffle????
 
Good question! I still havent had lunch yet although I am hungry. I'm just not very interested today. Maybe an apple? I ate homemade beef barley soup for breakfast though.

I've been making them for years - here's my recipe:

Oreo Balls:
1 pack Oreos
1 8oz pack Cream Cheese -softened
2 8oz boxes Baker's Semi Sweet Chocolate

Put oreos in food processor and grind them down to nothing but crumbs. Put in a bowl with softened cream cheese and mix until Well combined. Roll into balls and put on wax paper. Put in the fridge for a few hours to set up.
Melt the baker's chocolate (I do it in the microwave like it describes on the box). Roll each ball in chocolate and put on wax paper to dry.
A trick I use to do this is to take a 4 pronged plastic fork, break off the two center prongs, and use that to roll, dip, and drain the oreo balls in chocolate.


Warning - grab a glass of milk before indulging! They are Rich! ;)
 
Lunch was leftover chili and cornbread, with a chocolate sundae for dessert. Yumm!
 
Leftover baked mac & cheese, and the last slice of lemon cake....
 
I'm having leftover tater tot casserole. :sad2: We were snowed in yesterday and it's all I could come up with for dinner.

It was not a hit and I'll probably be eating it for days.
 
I've got a Lean Cuisine, it's angel hair w/sauce and cheese. I've had LC all week, they've been pretty good actually....I also have a bottle of Tazo iced black tea, can't wait to drink that, I love Tazo Tea!! :) I also have some turkey pepperoni and Laughing Cow cheese that I ate for breakfast..... :)
