Once again, I forgot to leave the pizza dough out to rise. So dinner will probably be stuffed chicken parm with pasta. I was going to have that last night, but I was too lazy to cook.

I'm making macaroni and cheese (Martha Stewart's recipe), grilled chicken breast, broccoli, and a chocolate pie. I don't normally make dessert, but my husband has been gone since Friday and I've got to show him what he's been missing.

Tomorrow I think we'll go out to eat.

Pretzel Chicken :)

In a Ziplock bag or food processor, crush about a cup (give or take) of pretzels. Add a sprinkle of pepper and thyme. Beat 2 eggs and add a splash of water. Take 3 boneless, skinless chicken breasts and dip once in the pretzel mix, then in egg, and then again in pretzel.

In a good sized skillet, heat on medium and add 1/4 inch of veg. oil. When hot, add chicken. Brown on both sides about 5 minutes or until pretzel breading looks toasty.

I got it out of the new Rachael Ray cookbook :)

Stouffer's Chicken Enchilada's...has to be easy tonight! I'm lazy....
